2 servings of garlic pasta ( I have been craving this since I saw it at the hot food section of whole foods, finally I got a chance to cook it and it was delicious and refreshing )

Water ( I walk/jogged in the morning and after I got back, I only wanted water)

Baked Tofu and Stir Fry Vegetables

1 1/2 serving of stir fry vegetable (Kale, Carrots, green beans, baby corn)

4 slices of baked tofu (marinated in Soyaki, Inspired from my baked tofu at the Elephant Bar)

1 scoop of Trader Joe’s Chocolate cherry Soy Creamy

3/4 medium popcorn from AMC theatres ( we saw Super 8 – GREAT MOVIE!!)

1/2 pound of potato wedges

Meal 2:

Vegan Quesadilla with "ground meat" and daiya cheddar shreds

3/4 medium size quesadilla ( corn tortilla, daiya cheddar shredds, Yves ground meat)

Vegan Quesadilla with smartdogs and daiya cheddar shreds

3/4 medium size quesadilla ( corn tortilla, daiya cheddar shredds, Soy Smartdog)

1/2 cup watermelon seeds 

1 scoop of Trader Joe’s Chocolate cherry soy cream (I’m happy to have it back in my freezer… yummy)

Veggie Chowmein with 2 toasted wheat bread spread with Earth Balance Butter

1 serving of Vegetarian Chowmein (I turned my left over stir fry into veggie chowmein)

2 cups of chocolate soy milk from Trader Joe’s

1 medium size banana

Snack: (while watching a movie at home with family)

1/4 cup of popcorn (measurement down prior to kernel popping)

1 glass of Ginger Ale

Snack 2:

1 1/2 mini panini sandwich of Tofurky deli and Daiya Cheddar Shreds

1 bottle of Vitamin Water (Focus)

Meal 2: 

1 serving of adobong sitao

1 piece of grilled Gardein Chick’n Scallopini

1 cup of brown rice

2 piece of dried mango

1 scoop of Trader Joe’s chocolate cherry Ice Cream (my last scoop)

Midnight Snack: (THIS IS BAD!!)

1 small bowl of rice with adobong sitao

NOTE: 

I ate a lot on this day without my realizing it. I did not write it down my journal book as soon as I ate it, :(. Anyway, that is life  I just need to keep track next time. 

The soy ice cream did last me for quite sometime (about 20 days ago). I may need to stop by again to get that and the soy mini ice cream sandwiches.

Lunchbox (brown rice, Gardein Orange Chick’n, Sauteed Kale/Carrot)

Stir Fry ( Tofu, "ground meat", Green Beans and Carrots) with Brown Rice

1 1/2 serving of stir fry ( tofu, Yves “ground meat”, green beans/carrots)

1 glass of Ginger Ale

1 mini soy ice cream sandwich from Trader Joe’s

NOTE: 

First time to incorporate the Thai chili oil/paste in my stir fry. It brings a good amount of heat. Also I added it to my condiment of soy sauce, mustard and chili. I was one happy person during dinner. 🙂 

Meal 1:

Snack:

1cup of sparkling water

Meal 2:

1 order of veggie mongolian bbq ( no meat and the grill was freshly cleaned )

1 small fries dipped in malt vinegar

1 watermelon flavored lollipop

Snack:

1 scoop of Trader joe’s cherry chocolate soy ice cream

1 small bowl of lays chips

1 cup of carbonated water

NOTES:

I did a 3 mile walk today … felt great afterwards however I had a lot of carbs for dinner hahaha so maybe it balances things out? I dont know. I am enjoying this walking thing, I’m not a runner and don’t like to run, so I just walk for about an hour (about 3 miles). I will do my very best to continue this and be consistent on it 🙂

Note:

So excited to cook the mabo tofu… it requires 3 ingredients and so simple to cook ( provided that the sauce is already pre-made and it was on sale). Delicious!
