Meal 1: 

Veggie Chowmein with 2 toasted wheat bread spread with Earth Balance Butter

1 serving of Vegetarian Chowmein (I turned my left over stir fry into veggie chowmein)

2 cups of chocolate soy milk from Trader Joe’s

water

1 medium size banana

Snack: (while watching a movie at home with family)

1/4 cup of popcorn (measurement down prior to kernel popping)

1 glass of Ginger Ale 

water

Snack 2:

1 1/2 mini panini sandwich of Tofurky deli and Daiya Cheddar Shreds

1 bottle of Vitamin Water (Focus)

Meal 2: 

1 serving of adobong sitao

1 piece of grilled Gardein Chick’n Scallopini

1 cup of brown rice

2 piece of dried mango

water

1 scoop of Trader Joe’s chocolate cherry Ice Cream (my last scoop)

Midnight Snack: (THIS IS BAD!!)

1 small bowl of rice with adobong sitao

water

NOTE: 

I ate a lot on this day without my realizing it. I did not write it down my journal book as soon as I ate it, :(. Anyway, that is life  I just need to keep track next time. 

The soy ice cream did last me for quite sometime (about 20 days ago). I may need to stop by again to get that and the soy mini ice cream sandwiches. 

Meal 1:

1 cup brown rice

1 serving Adobo with Bamboo shoots and Eggplant

1 cup of Trader Joe’s Chocolate Soy Milk

Water

Snack:

1 small banana

1 handful of corn kernels from a Corn on the cob

Meal 2:

Vegan Chili Cheese Dog

 

1 vegan chili cheese veggie dog sandwich (toasted wheat bread, soy cheese, lightlife smartdog)

2 cups of carbonated water

1 scoop of Trader Joe’s Cherry-chocolate soy ice cream

5 Slices of Watermelon

Snack 2: (during American Idol)

1 small plate of chips with 1/4 cup of chili

water

NOTE(S):

CHILI

I made chili for the first time. 

1 can of Chili Beans

1/2 cup of Soy chorizo ( from Trader Joes)

3 small tomatoes diced

1 8 oz can of Tomato sauce

1 small onion – diced

1/4 tablespoon cayenne pepper (I did not have any paprika at home)

1/4 tablespoon oregano

salt and pepper

1/4 cup of water

1) Put a small 1/8 tablespoon of oil on the pot. When heated, place the onions and soy chorizo. Brown the soy chorizo and cook the onion until it sweats.

2)Then place all the remaining ingredients in the pot. Bring to a boil. Then place the cover, reduce the heat and let it simmer for 20 minutes. Stir and then taste, adjust accordingly. Yummy

Meal 1:

1 1/2 cup white rice

1 stir fry – Gardein Chicken Scallopini, Portabello Mushroom, Corn, Carrot, Green Beans

water

1/2 cup Chocolate Soy Milk from Trader Joes

Meal 2:

Soyaki Stir Fry with Tofu, Asparagus and Broccoli

2 servings of stir fry tofu with asparagus and broccoli in SOYAKI sauce ( from Trader Joes)

1 cup white rice

2 cups of Trader Joes Chocolate Soy Milk

1/2  banana (med size)

water

1 small scoop of Trader Joe’s Cherry Chocolate Chip Soy Ice cream

Notes:

Soyaki from Trader Joes – DELICIOUS… I’m so glad I found this sauce… it tastes like teriyaki and it has a good blend of flavors. I would definitely use it over and over again. 

Trader Joes Chocolate Soy Milk is my favorite  choco soy milk so far. The taste is just right – chocolatey but not too sweet. 🙂 I could drink the whole carton but I have to stop myself.
