Meal 1:

1 1/2 brown rice

1 serving of stir fry fofu with soyaki sauce (left over from the night before)

Snack 1:

1 handful of tortilla chips

1 scoop of Trader Joe’s Cherry Chocolate SOY Ice Cream

Snack 2:

1 peanut butter and banana sandwhich on wheat bread

1 cup of Trader Joe’s Choco Soy Milk

Meal 2:

1 cup brown rice

Adobo with Bamboo Shoots and Eggplant

1 serving of Adobong Bamboo Shoots and Eggplants (mom cooked it 🙂 )

5 pieces of Gardein Beefless Tips (I added the protein to the adobo)

1 glass of carbonated water

Notes:

I would like to thank my mom for cooking the adobo with veggies, its a nice break from my stir fry veggies and to have the taste of filipino food. Adobo is one of my favorite dishes. 🙂
