Snack:

1 serving of toasted french baguette with Earth Balance butter and Strawberry Jelly

Lunch:

1 cup of brown rice

1 medium bowl of red thai curry with baby bok choy, spinach, pumpkin, and Gardein Beefless Tips

1 scoop of Trader Joe’s Cherry Chocolate SOY Ice Cream

water

Dinner:

1 cup of brown rice

1 serving of sauteed spinach

2 pieces of lightlife smart dogs

1 scoop of Trader Joe’s Cherry Chocolate Soy Ice Cream

water

Notes:

I’m crazy for the Earth Balance Butter spread this week. The taste is similar to the real thing, and its creamy… I can’t wait to use it on recipes and/or sandwiches 🙂
