1 Raspberry Red Velvet Cupcake from Yummy Cupcake

Meal 2:

1 cup white rice

1 cup Stir Fry (tofu, carrots, cabbage) in Soyaki Sauce

1 slice of watermelon

Notes: 

The Raspberry Red Velvet cupcake is delicious. The cake is moist and just the right sweetness. The raspberry filing is both tart and sweet – perfect combo. I can’t believe that this cupcake is vegan. Will definitely need to try it again.  I apologize for the deformed cupcake photo; It didn’t travel well 🙂
